Recipes | June 20, 2015 | By

There is nothing better than a lovely weekend brunch and French Toast is one of those brunch items that may get passed up because it seems like a bad food. French Toast can be made healthy and still so delicious.

This recipe takes whole grain bread, eggs, cinnamon, vanilla extract, fresh strawberries, greek yogurt and honey and turns it into one amazing, beautiful breakfast!

2 slices Whole Grain Bread
2 eggs
Cinnamon
Vanilla Extract
1/4 cup greek yogurt
Honey
4-5 fresh strawberries
Coconut Oil

Beat eggs and add 1 tsp vanilla extract and a 1/2 tsp cinnamon. Mix around. Heat pan with 1 tsp coconut oil. Place bread into the egg mixture and coat both sides. Add to heated pan and cook till both sides are brown. Blend the strawberries with a bit of water until mixed. In a small bowl mix greek yogurt with 1-2 tsps of honey and a bit more cinnamon. Cut french toast into triangles and drizzle with strawberries, your greek yogurt mixture and a bit more honey. Enjoy! Makes 2 servings.

1 serving equals = 1 💛, .5 💜, 1 ❤️, and 1 tsp

Hey Kelly! Thank you so much 🙂 It was super yummy. The recipe makes 2 servings, so 1 piece of whole grain bread is 1 yellow 🙂 You just cut it in half diagonally to make 2 triangles!

This looks great! What kind of bread do you use that allows you to have 2 slices count as 1yellow?
