Chicken, Shrimp & Veggie Fried Rice

Brown rice and riced cauliflower work in perfect harmony in this healthier version of fried rice! We added chicken, shrimp, scallions and carrots but you can use any protein or veggies you like! This dish is super satisfying and very filling!

Chicken, Shrimp & Veggie Fried Rice

A protein and veggie packed dish that's family friendly, healthy and super filling! Make this dish keto-friendly but eliminating the brown rice and increasing the amount of cauliflower rice used!

  • 6 chicken breast strips cut into small cubes
  • 15-20 medium sized deveined shrimps shell off
  • 2 eggs
  • 4 cups cooked brown rice we use the Frozen Organic from Trader Joe's
  • 1/2 cup riced cauliflower
  • 1/2 small carrot peeled and diced into small cubes
  • 1/2 scallion whites removed and greens cut into small pieces
  • 1 TBSP Olive Oil
  • 1 TBSP Sesame Oil
  • 2 TBSP Light Soy Sauce
  • Salt and Pepper to taste


  • Heat olive oil in a wok or very large sauce pan over med-high heat. Add chicken cubes and begin to brown.
  • If oil gets too hot, reduce to medium.
  • While chicken browns, add veggies and stir until chicken it completely brown on all sides and veggies are soft. Add rice and mix well. Turn heat down slightly so that nothing overheats.
  • Add soy sauce and mix into mixture to add some moisture to your pan.
  • Move chicken, veggies and rice to one side, and add shrimp to empty side. Heat shrimp through until they are slightly white. Move shrimp to other side along with chicken, veggies and rice.
  • Crack eggs on empty side of pan. Stir eggs until they start to scramble slightly and then mix into chicken, veggies, rice and shrimp.
  • Add sesame oil. Mix through.
  • Sprinkle with salt and pepper. Serve warm!
  • You can refrigerate leftovers for up to 3 days and re-heat in a pan or microwave.
