Yogurt Dough Breakfast Pizza

Yogurt Dough is an amazing lower carbohydrate, lower point alternative to bread dough. It can be used in a multitude of applications such as bagels, calzones, cinnamon rolls and of course pizza!

This breakfast pizza is amazing and you can use whatever toppings you have available (bacon, sausage, or just veggies).

FYI: Multiply the recipe and make a few dough balls to freeze and use for recipes later on! Rub the dough with a bit of oil and wrap in plastic. Place in a large ziplock bag and freeze for up to 3 months. Defrost in the fridge and sprinkle with a bit of flour when ready to use!

Yogurt Dough Breakfast Pizza

Ingredients

  • 1 cup Fage or other brand Fat-Free Greek Yogurt
  • 1 cup AP Flour
  • 1.5 tsp Baking Powder
  • 1 tsp Salt
  • 3/4 cup Mozzarella Cheese
  • 8 grape tomatoes cut into small pieces
  • 3 eggs
  • 3 oz. prosciutto cut into small pieces
  • Salt and Pepper to season pizza before baking

Instructions

  • Preheat oven to 450F.
  • Coat a large baking sheet with cooking oil and parchment paper.
  • Mix 1 cup Fat Free Greek Yogurt (the thicker the better), 1 cup AP Flour (White or Wheat), 1.5 tsp Baking Powder, 1 tsp salt in a bowl. It will be sticky, so dust a surface and your hands with flour to roll out and knead into a large ball.
  • Separate the dough into 3 pieces and roll into pizza shapes (oval, square, triangle...whatever you feel!).
  • Sprinkle 1/4 cup mozzarella around the outsides of the pizza, place the tomatoes into a circle shape to create a well for the egg.
  • Crack egg and carefully drop on the pizza in-between the tomatoes.
  • Sprinkle 1 oz. prosciutto around the pizza and season with salt and pepper.
  • Place on baking sheet. Repeat with 2 other pizzas.
  • Bake for 15 minutes until edges are golden and egg is cooked through.
  • * If you would like to add spinach, onions, artichokes, or extra veggies...go for it. Place them under the egg! Be as creative as you would like.
