Veggie Stuffed Meatloaf

Delicious, veggie filled meatloaf makes an awesome lunch or dinner and it’s so easy to make! Put whatever veggies you would like to give it your own twist!

1.5 lbs lean ground turkey or beef
Steam whatever veggies you have on hand (I used 1/3 a broccoli, a 1/4 cauliflower and 1/4 of a butternut squash) till fork tender
1/2 cup low sugar tomato sauce and another 1/2 cup for after meatloaf has finished baking
3/4 cup whole wheat bread crumbs
1 whole egg
1 tbsp Italian seasoning
1 tsp chili flakes
Salt and pepper to taste

Preheat oven to 350 F

In a blender, blend all your veggies with a bit of water until puréed.

In a large bowl add veggie purée, ground turkey, bread crumbs, tomato sauce, egg, Italian seasoning, chili flakes and salt and pepper.  Use a spoon or your hand and incorporate all together. Spray a loaf pan with cooking spray and spoon all the turkey mixture into the loaf pan. Smooth down with a spoon so the top is even.

Bake at 350 F for 40 minutes uncovered. Increase temp to 400 F and bake for another 20 minutes until internal temp is 165 F or greater.

Remove meatloaf from the oven and let cool. Slice pieces and pour a bit more tomato sauce over the top and serve!

Makes 6-8 slices depending on size you cut.
