Turkey Cutlets with Red Mash

This is a perfect special meal for the whole family, if you are having guests or for a date night! Whole wheat breadcrumb dipped turkey cutlets, red potato mash with plain Greek yogurt and chives and a half an artichoke with a side of vinaigrette! Equals 1 green, .5 orange, 2 red and 2 yellow.

Use our breadcrumb recipe listed in the post below. Add about 6-8 tsps of olive oil to a deep pan and heat up on medium high. Salt and pepper cutlets and then dip turkey cutlets in an egg wash (scramble 2 raw eggs up on a plate), and then dip in the breadcrumbs. Place in the oil and brown on each side. Once browned let drain on paper towel. Once all turkey pieces are browned and drained, place on a baking sheet with foil and cook at 350 for 15-20 minutes.

Cook potatoes until fork tender and mash. Add about 1/4 cup skim milk, half a small container of plain Greek yogurt, chives and spices. Stir until smooth and season until happy with taste.

Steam artichoke in a pot of boiling water with a lid until fork tender. Serve cut in half with a side of vinaigrette!
