Cheesy Cauliflower Bake

It’s the final week before the wedding that I originally started this journey for! I am down 42 lbs so far, but I wanted to ramp it up a bit this week, so I am doing a low carb version of 21 Day Fix. I plan to have grilled fish or chicken tonight, but wanted a fun side dish that was yummy but still healthy and low carb! Cheesy Cauliflower Bake is the perfect compliment to grilled fish or chicken.

      Hi Ashley! It’s 1-2 greens, .5 blue and .25-.5 yellow per serving depending on how much milk you use!

    I just made this last night and my two family members who hate cauliflower loved it! Told me to make it the same way again (I didn’t tell them what it was at first). I did use the chopped cubes of cauliflower that Walmart has and steamed it in the bag but loved the texture and the whole dish – have to double it next time for leftovers 🙂

      Of course! You can use soy milk or regular low fat milk.

    Hi! I was wondering why no yellows! I thought that almond milk is considered a yellow! Thanks 🙂

      Almond milk is considered a yellow if you got over a certain amount of ounces. Autumn has said that under 4 ounces is free, so this recipe wouldn’t be considered yellow 🙂
